Guacamole’s waiting on liquor license to open at Trumbull mall

TRUMBULL — When it was announced that the Mexican restaurant Guacamole’s Mexican Cuisine would open in the former Wahlburger’s space in the Westfield Trumbull Mall, those connected to the project said the new eatery could open by January.

But it’s now mid-April, and the restaurant hasn’t yet opened.

“We don’t have a firm opening date from the ownership yet,” said Patrick Madden, vice president of shopping center management for the mall. “They are waiting on their liquor license to be issued, and then they should be clear to open.”

Trumbull economic and community development director Rina Bakalar echoed those thoughts.

“They are waiting on their liquor permit from the state as of a few days ago,” she said. “Otherwise, I believe they are ready to go.”

Once it opens, the Trumbull mall will Guacamole’s third location. The restaurant already has locations in Branford and at the Connecticut Post Mall in Milford.

When interviewed in December, Gabriela Velazquez, one of the owners of Guacamole’s, said the restaurant was tentatively slated to open Jan. 15.

The spot is replacing Wahlburger’s, which opened to much fanfare in 2017, but closed in 2020. The company is owned by the Wahlberg brothers — chef Paul Wahlberg and actors Mark and Donnie Wahlberg — though the Trumbull location was run by a local franchisee.
