Twins Judy and Joy: A special celebration

It is October and we are celebrating fall, Breast Cancer Month and Judy being a 3½-year-survivor! To all of the women out there, we have a few things to say to you: Get your mammogram, fight for an ultrasound if you have dense breasts and if you can’t do it for yourself, do it for the people that love you.

With that being said, we all need to feed our bodies with healthy foods so our immune system will be strong enough to fight off disease. Remember the saying “We are what we eat”? Well we are! This stew is comfort food at its best and it will feed your soul as well as your body.

This fall stew recipe is lower in fat than the traditional one and chock full of anti-oxidant rich vegetables. It is truly comfort food at its best and wonderfully satisfying. It will feed your soul as well as your body.

Once again, let’s remind our loved ones to make that mammogram appointment!

Hearty Healthy Stew

3 turns around the pan with olive oil

1 lb. of ground turkey breast

kosher salt and freshly ground black pepper

1-1/2 cups of chopped onions

2 cloves of finely chopped garlic

1-½ to 2 cups of chicken broth*

a splash of bourbon or cognac, optional

1 pint of cherry tomatoes

2 medium potatoes diced very small pieces, optional

2 handfuls of frozen green beans

2 handfuls of frozen carrots

*add more broth if you like

Serve in:

Jack-Be-Little mini pumpkins

To a hot pan add olive oil. Add ground turkey and cook till golden. Season with salt and pepper

Add the onions, garlic, and cook for about 5 minutes. Add broth, splash of cognac, tomatoes and toss in the handfuls of frozen carrots, green beans, and small diced potatoes. Cover and cook for about 30 minutes.


To prepare mini pumpkins:

Cut a circle around each stem. Gently move stem to release (set top aside). Remove the insides and season with salt & pepper. Rub the pumpkin with olive oil and place on a cookie sheet with tops and bake until tender, about 20-30 minutes.

Fill each mini pumpkin with stew and garnish with pumpkin top.
