Ahi tuna, fresh off the grill

Every time I think of Florida my heart smiles. We have been back and forth to this stunning little island, Hutchinson Island, where my in-laws have lived now for 27 years. Coming back from a great time there I remember all of the little things that make it magical and special to me and I want to relive those moments again & again.

From spending a day on a magnificent boat, or just fishing right from the beach, to the homemade ice creams and chocolates from Kilwins and the gorgeous flowers everywhere, which inspire my floral arrangements throughout my home. I try to bring all of these wonderful memories back home with me. And of course we can not forget all the fresh fish!

The fresh fish is plentiful on the island and the variety is even better. From grouper, to mahi mahi, to shark bites! But my favorite of all is the ahi tuna. I love to turn it into a burger with fresh herbs and spices and grill it to perfection.

Dinner is served! The table is set with the my stunning floral arrangement inspired by the island and I have made some chocolate truffles for dessert — just like the ones at Kilwins Chocolates. It is time to sit back now and enjoy this wonderful meal and remember the great times on the stunning little island we call home.

You can’t go wrong with this spin on the classic grilled burger. There is nothing better than a perfect juicy burger on the grill, but when you want go a bit lighter, this is the one to try. We were not sure the family would like our new burger but we served it anyway.

Ahi Tuna Burgers with Citrus Aioli

12 oz  ahi tuna

2 tsp. lemon zest

1 tsp. garlic powder

1 tsp. fresh dill

1 tsp. fresh thyme

1/2 tsp. salt

1/2 tsp. pepper

1 egg

1/3 - 1/2 cup panko breadcrumbs

2 tablespoons olive oil


hamburger rolls

Blend all (except arugula and rolls) together in food processor.  Make patties as large as desired. Bake, broil, grill or fry! It’s your choice! Top with arugula and aioli.

Citrus Aioli

1/3 cup mayonnaise

1 tsp. lemon zest

1 tsp. orange zest

pinch of salt & pepper

Combine all, taste, re-season if necessary.
