There is something so wonderfully restorative about a New Year! The New Year gives us a joyous opportunity to begin anew, to rewind after a hectic holiday season and refocus on preparing a delicious life.
After many weeks of rich and delectable dishes, the new year’s body is ready to be cleansed and refreshed. Preparing homemade broths and soups is the perfect antidote to overindulgence, as well as a calming and nurturing activity.
Beautifully prepared chicken broth is a superb source of minerals. The high calcium, magnesium, and phosphorous content supports excellent bone and tooth health. Rich in collagen, homemade chicken broth can improve joint health, revitalize skin and nails, as well as possibly smoothing out connective tissue to reduce cellulite and increasing hair growth and strength. Those suffering from colds, flu or other bronchial ailments should respond well to the immune boosting and soothing benefits of chicken broth.
Preparing homemade broth requires time and attentiveness, but the results are immensely satisfying. Once you have prepared a large amount of broth, you can store individual containers in the freezer and quickly put together a comforting meal. Your broth will mirror the excellence of the ingredients you put in your pot, so pay close attention to the quality of your chicken and vegetables. Be sure your garlic has not spoiled, as that will add a bitter taste. Use crisp, fresh celery stalks and bright green parsley. Firm onions and good looking carrots will also add to the ultimate success of your broth. Utilizing organic ingredients in your preparation will create clean, toxin free broths and soups that supply deep, delicious flavor.

Natural New Year
5-6 whole garlic cloves
2-3 large organic carrots, peeled and chopped into large pieces
1 large yellow onion
1 large red onion
large bunch of bright green parsley, washed well
6-7 organic celery stalks, washed and chopped
a 4 pound organic chicken
a handful of black peppercorns
Place all ingredients into a large stockpot. Add enough water to cover everything. Bring to a boil and then lower heat and let simmer uncovered for two hours. Strain stock into another bowl, discard vegetables, let the chicken cool, pull off chicken meat and set aside. Refrigerate stock until ready to use within the next few days or freeze in separate containers. Skim fat off top when cool.
Natural New Year
3-4 large, peeled carrots sliced
shredded chicken meat set aside from broth preparation
2-3 stalks of celery, sliced thin
large handful of kale or spinach leaves, washed, trimmed and chopped
Heat broth and add carrots, celery and chicken meat. Simmer until chicken is heated through and vegetables are tender. Add kale or spinach at last minute before serving. Serve soup immediately. Add a little parmesan cheese on top if desired.
