Steaks & Scotch come to Trumbull Center

When it comes to getting the word out about his new Trumbull restaurant, “parker. Steaks & Scotch” owner Patrick Fahy relies largely on  word-of-mouth from satisfied customers. So he has to make sure they leave happy.

“I don’t usually advertise,” Fahy said Sunday night, when the restaurant celebrated a ribbon-cutting with family and friends of Fahy and Parker co-owners, Al and Sharon Barbarotta. The guests for the casual menu sampling included Gov. Dannel Malloy.

The 921 White Plains Road restaurant is located on the west side of the Trumbull Center property, once occupied by Dunkin Donuts.

Fahy, who describes the restaurant as “upscale, but casual, without a pretentious vibe” said the anticipation surrounding the new restaurant is already bringing people in the door. The restaurant quietly opened last week and on Wednesday had a packed house. Fahy said he thinks that much of the excitement comes from the fact that Trumbull hasn’t had a new restaurant, in a new space, open in a while. Fahy is a Trumbull native and used to work in Trumbull Center.

“I grew up in Trumbull so it’s really cool to be back and see some familiar faces,” Fahy said.

Fahy also owns “parker. Eatery and Bar” in Stratford. The Trumbull location is described as an “amplified version” of the successful Stratford restaurant. Both restaurants are named after his son. He also has a daughter, Emma, and jokes he may have to start another business in her name, perhaps a bakery.

While the new Parker features premium scotches and high-end prime aged beef, there are plenty of other options on both the food and spirits menu. Customers can choose from the steak menu, which Fahy says will get added on to over the next couple of weeks, to include some specialty items. Currently, the “New York, New York” 14-ounce steak is one of the top menu item, costing $28. Customers can also opt for a non-steak dish like a burger, sandwiches, or entree items like salmon or duck breast. Prices for entrees range from $20 to $30, while salads and sandwiches are about $10 to $20.

The restaurant is designed with a sleek, modern feeling and with what Fahy describes as rustic touches, like a 300 year-old beam that was going to be discarded from a Trumbull residence and some wooden-topped stools in the bar. There is an indoor dining room, a large bar area and a covered patio for dining, that will have outdoor heaters when the weather cools down.

“I open what I like and I’m excited to share that here in Trumbull,” Fahy said.

Al Barbarotta, who is the town’s facilities manager and also the President of AFB Construction, said he was happy to support Fahy’s venture into Trumbull. Fahy grew up with his son.

“We’re very excited to be able to bring this great restaurant to town,” Barbarotta said.

Barbarotta hailed Fahy for doing a lot of grunt work himself to get the restaurant ready.

Sharon Barbarotta said she and her husband have been happy with all the decisions Pat and his wife, Kristy Fahy have made in designing the new restaurant.

“It’s amazing and what Trumbull needs,” Sharon Barbarotta said. “We had someone say when they came in here, ‘I feel like I’m in Manhattan.’”

Parker hours are Monday through Thursday 11:30 a.m.  to 10 p.m., Friday 11:30 a.m. to 11 p.m. and Saturdays from 4 p.m. to 11 p.m. It will be closed on Sundays. The restaurant can be reached at 203-590-3400.
